As far as I am concerned nothing beats a good oatmeal cookie. They are one of my all time favorite treats (only the homemade ones though, I have not been able to find a good store bought oatmeal cookie.) Sooo – when our apple trees were overflowing with apples a little earlier in the season, and I was baking up a storm over her, I stumbled on to a recipe for Apple Oatmeal Cookies and decided to give them a try. The kids and I quickly got to work mixing these up, my kids love to pretend they are helping me bake just so they can get there hands on the mixing bowl and spoons bake! They are actually really good helpers in the kitchen, our apple dices are a little larger than you may want to go but I had them help me out with them so as far as our cookies are concerned, they were perfect for us! You know what else was perfect, our not perfectly circular but more of an oval shaped batch of cookies. I do love cooking and baking with my kids and this was a fun recipe to make with them.

½ cup butter, softened
6 tablespoons brown sugar
¼ cup sugar
½ teaspoon vanilla extract
½ cup plus 1 tablespoon AP flour
¼ teaspoon baking soda
¼ teaspoon alt
¼ teaspoon cinnamon
½ cup peeled and diced apples
Preheat oven to 350 and line a baking sheet with a silicone baking mat or parchment paper.
In a large mixing bowl, cream together the butter and sugars until light and fluffy. Add in the egg and vanilla extract. Next, add the dry ingredients, slowly mixing as you go. Stir in the oats and diced apples.
Scoop the dough onto the already prepared baking sheet and bake for about 8-10 minutes or until the edges are golden. When done, allow them to cool a bit before tasting.
