Oatmeal + Dark Chocolate Chips (Muffin Like) Cookies

A while back I shared with you my all time favorite cookie.  A delicious homemade Oatmeal Chocolate Chip Cookie.  Well, Sweet Girl and I had a craving and made them again last week with one little change.  The original recipe calls for 1 cup of vegetable shortening.  We didn’t have any in the house and I really had no desire to use vegetable shortening anyway.  We decided to replace the shortening with applesauce in the recipe, we had done it before and it worked out great so why not try it here?

The result was an amazing cookie! Actually, they were more of a muffin like cookie.  By that I mean they were so fluffy on the inside- here can you see what I mean in this picture?

They actually tasted very similar to a breakfast cookie.  I probably would have let the kids eat them for breakfast if they didn’t have 2 cups of sugar in them (but now that I think about it – that is 2 cups in about 40 cookies so maybe next time we can alter them a little more and have them for breakfast.)

We made these with jumbo semi-sweet chocolate chips and they melted so perfectly inside these muffin like cookies.  These are now our new favorite homemade oatmeal chocolate chip cookies and will be made quite often in this house …. like maybe again this week…enjoy!!!

1 cup applesauce
1 cup sugar
1 cup light brown sugar
2 eggs
2 tablespoons milk
1 1/2 teaspoons pure vanilla
1 1/2 cups AP flour
1 teaspoon baking soda
1/2 teaspoon salt
4 cups whole grain old fashioned oats
1 cup semi sweet chocolate chips
Preheat the oven to 375 degrees.  In a large bowl blend the applesauce with the sugars – be sure to add the sugar a little at a time.  Add eggs, milk and vanilla and beat well.  Stir in the oats and the chocolate chips.  Drop the batter by rounded tablespoonfuls on to an ungreased baking sheet, spacing the cookies about 2 inches apart.
Bake for 13-15 minutes or until golden brown.  Remove from oven and let cool for about 5 minutes.  Finish cooling cookies on a wire rack.
