I have a great summer snack/dessert/treat for you. I have seen a few different versions of these chocolate covered bananas in different places and I kept saying I needed to try this out. The other day when hubby went to grab a banana all the other bananas in the bunch fell and started unpeeling. They needed to be used ASAP and as appealing as both Peanut Butter Banana Bread and Banana Nutella Bread sounded, I opted to try something new. I remembered seeing banana bites on the web and in magazines so I went ahead and raided my pantry. I found my favorite semi-sweet morsels and a big jar of peanut butter and got to work. This took no time at all and the results were oh so yummy! The kids loved these and chose bananas over ice cream for dessert a few nights this week. That’s huge!! Have you tried these yet? What you need:
3 bananas, sliced
1/2 cup peanut butter
1/2 cup chocolate chips
a few splashes of milk
What you do:
Line a sheet pan (I used wax paper)
In the microwave or over a double boiler (I use the stove top method) melt the chocolate chips with the peanut butter, stirring constantly. Add milk as needed to ensure a smooth consistency.
Dip the banana slices into the mixture, I found it best to use a fork when dipping. Lay the banana bites on the lined sheet pan and freeze for a few hours – until completely frozen.
Store in freezer in a container or bag.
